Bakery students and staff create cake for royal occasion

One of the highlights of this week’s visit by HRH The Princess Royal to our Equestrian Centre was the cutting of a spectacular celebration cake designed by Reaseheath Bakery Lecturer Sam Copeland and made by Professional Bakery students.

The Princess Royal was on campus to officially open a new purpose built centre and Platinum Jubilee Stables for Nantwich & District Riding for the Disabled Group. One of Her Royal Highness’s duties was to cut the first slice of the cake in front of a delighted audience, who later shared it along with 150 cup cakes which were also designed and made by bakery students.

Level 3 Diploma in Professional Bakery students Chloe Linklater, Ellis Campbell, Lillie Johnson and Isabella Yates baked the cupcakes, while the toppers were designed and made by undergraduates Lili Dufley and Heather Lambert (FdSc Bakery Technology) and Erin Riley (Level 2 Diploma in Professional Bakery).

The large sponge cake was baked by our new bakery lecturer Gary Russell and covered with white sugar paste by Ellis and Chloe. It was designed by Sam Copeland, who decorated it alongside Lili and Heather.

The design of the large cake showed a horse’s head complete with a rosette within a circle of lettering reading Nantwich & District RDA. The base was adorned with small purple flowers and horseshoes, a theme also chosen for the cupcakes by the students.

Sam said: “This has been a tremendous collaboration of students across all levels. I’m delighted that new staff member Gary has been involved, and I am very proud of what this team work has achieved. It has been a marvellous opportunity for our students to be involved in such a prestigious event.”

Lili, Heather and Erin attended the ceremony and were responsible for laying out the cup cakes and cutting up and serving the large cake to guests. Lili said: “This has been a wonderful experience for us all, and something very different to add to our CVs. I’ve also enjoyed working alongside students from other course levels and sharing ideas.”
